I have a hotkey set up to toggle a certain monitor profile (disabling 2 monitors, enabling 1 TV output and vice versa). I'm wondering if there is a way within DisplayFusion to script something that would change my default audio device depending on which hotkey I'm engaging.

Yep that should be possible. If you open the DisplayFusion Monitor Configuration window, and click the "Manage Monitor Profiles" button, you can add audio devices to each profile and it will load them when you load the monitor profile.
