I found the profiles in the registry at HKEY_USERS\S-1-5-21-3389849328-3111932096-555468319-1001\Software\Binary Fortress Software\DisplayFusion\MonitorProfiles\. Duplicating the first profile in here allowed me to get to the 3 profiles I wanted which I could then edit. Inconvenient, but it works if anyone else runs into this.

Why not always give us the choice to create a new profile or overwrite an existing, despite if any settings were changed?
For example, I wanted to duplicate my current monitor profile with just a change to the audio device. I had to change an unused settings like 'monitor fading' to make the 'new profile' option appear. I then create the new profile and adjusted it as needed. Then I have to go back and make sure 'monitor fading' is disabled for each profile and save them again.
