I was wondering if there was a way to move a ghost monitor away from my monitors so my mouse can't access it at all. Something like the screenshot I've attached. Or if anyone knows of a way to do this?

This isn't possible to do, unfortunately. Windows doesn't allow it.

We do have an open feature request for a function that prevents the mouse from moving to a specific monitor. I've added your vote to it and we'll definitely let you know if we're able to implement it in a future version.
