Hello,
I know there is a way to toggle system sound mute, however, does anyone know if it's possible to toggle audio input mute? and if so, how would I possibly achieve this.

There isn't currently a scripting function for muting the mic input, but I've put this on our feature request list. We'll be sure to let you know if/when we're able to implement it.
