is it possible to display one image across three monitors then have different images on monitors 4 and 5?

Not yet, but it's something we're planning to add in a future version. I'll be sure to post an update here when it's been implemented.

We've just released DisplayFusion 6.0 Beta 7, and you can now combine monitors while using the Different Image background mode, so that you can have an image span certain monitors, but not others.
